I thought that the star of David is used in the West Indies only in Trinidad and Tobago, but it turns out also in Barbados.

You may have more information, but I believer that the police use the star of David, while the Regiment/Defence force use a solid six pointed star.
All that I'm aware of is that Picton’s Royal Trinidad Rangers took to wearing, as a badge, a six-pointed star which they identified with Picton’s patron saint, St. David of Wales, as their own emblem.
I far as I'm aware, from around to 1802-1842 the the badge was on the Shako plates, gorgets and uniform of the MIlitia
I've seen it mentioned that the badge represented Picton's (a Welshman) patron saint, St David, how and why I simply don't know. There's little information on the subject and since the main emblems of St David are the leek, and flag (a yellow cross on black background) the star seems an odd choice. So maybe there was some confusion between the King and the Bishop/Saint.

There's a small illustrated booklet that may be of interest to you about the armed forces of Trinidad, it's part of the Commonwealth and Empire Series and called 'Gunga Din'.
It's a few years since I've seen it mentioned anywhere, but you may be able to find a copy.
