Wouldent sabres have been worn instead of bayonets?

No. The Mounted Rifles were just that, mounted soldiers to fight on the ground, a more mobile infantryman. Strangely they were armed with Martini-Henry carbines instead of rifles (these came later), and yataghan sword-bayonets. But in this case a spike bayonet is shown.
