Jumping an obstacle, next to another horse and rider, holding on with one hand, looking backward with one arm raised, yelling something, and holding a lance across the pommel (wait, does that make three hands?). How does he do it? I think he just jabbed his buddy in the gut with his lance butt.

Ah never under estimate the riding, shouting and jabbing skills of the Husaren-Regiment "von Zieten" (Brandenburgisches) No. 3 (and the British thought they had long winded regimental titles). Could I recommend D.H. Hagger's book "Hussars and Mounted Rifles", Almark Publishing 1974, as an excellent English language book of all uniform aspects of the Kaiser's hussars for 1900-14. Profusely illustrated as they say. There were other books in the same series covering dragoons, cuirassiers, jagers etc.
